Marinades are the secret to great grilling. They take an ordinary piece of meat, chicken or fish and turn it into a fabulous, flavorful dish – and best of all, a good marinade does most of the work. Lemon juice is a natural base for marinades for two very good reasons. First, lemon juice is a known flavor enhancer, and will work to accentuate the other flavors in your dish. Second, the acids in lemon juice work to tenderize meats and fish so that you end up with melt in your mouth goodness and not an over-dried BBQ disaster story. Here are some great marinade ideas.
- For all the recipes, simply combine the ingredients well and coat meat, chicken or fish, making sure all sides are covered.
- Cover and let the meat of fish refrigerate for at least one or two hours and ideally overnight.
- Grill as usual.
- Use the marinades within an hour or two of preparation.
Basic Lemon Chicken Marinade
Juice and zest of 4 lemons
5 sprigs fresh rosemary, finely chopped
5 sprigs fresh sage, finely chopped
3 cloves garlic, smashed and finely chopped
1/2 teaspoon crushed red pepper
1/2 cup Extra-virgin olive oil
